Wheat, wine and olives were important in the ancient Roman diet. The olive tree was even consecrated to two important deities, Minerva and Jupiter. Even today, wheat, wine and olives play a dominant role in the diet of people living around the Mediterranean. Speaking of wheat, there is pizza, this world-famous dish. Did it already exist in antiquity?
Well, the pizza's predecessor was rather focaccia, a flat, round bread with spices, salt and cheese on top. It already existed during the Renaissance, and in pictures of pots you can see that it actually also existed during antiquity. Pizza as we know it came a little later. On a real pizza, there should be tomato sauce and mozzarella cheese.
Which wine should we choose for our pizza? During the budding spring, I do not think we should of course choose a red but still an Italian. I therefore suggest a powerful rosé wine from Piedmont, the "Santa wine" from Josetta Saffirio, Langhe Rosato Good with food with the nebbiolo grape that is so typical in Piedmont. The wine is rather bright orange, aroma of violet, raspberry and sweet cherries. In the taste, what was in the aroma comes out with the addition of citrus tones.
